WAPPA - Recipes - Cajun-Style Pork

Ingredients for 8-10 Serves
Method
 1.300     kg Boneless pork shoulder, medium diced
 0.250     kg Onions, chopped
 0.030     kg Garlic, crushed
 0.025     kg Cajun meat spice mix, to taste
 0.100     kg Tomato paste
 0.400     kg Peeled tomatoes in juice, pureed.
 1.250     lt   Chicken stock, approx.
 0.010     lt   Fish sauce, to taste.
 0.150     kg Smoked sausage, sliced and sauteed.
 0.150     kg Green capsicum, blanched.

 


1. Assemble all prepared ingredients and equipment.

2. Heat deep pan, add vegetable oil and lightly brown pork.

3. Add onions, garlic, Cajun spices and lightly brown.

4. Add tomato paste, tomatoes in juice, and hot stock.

5. Bring to simmer and skim.

6. Cover and simmer for about 60 minutes or until pork is tender.

7.Lightly thicken with a slurry and cook out.

8. Add fish sauce, sausage and capsicum in the last 5 minutes of cooking.

9. Correct consistency, seasoning, pH etc. Pack and blast chill.

10. To serve, reheat until very hot, serve with lots of steamed short grain rice and a grilled prawn if desired.
