Crusty Sparerib Pies with Mozzarella
  I do hope you enjoy it!
 
Ingredients for 8-10 Serves
Method
1.300     kg Lean and meaty belly, boneless and medium diced
 0.100     kg Bacon, diced
 0.100     kg Onions,chopped
 0.100     kg Celery, chopped
 0.100     kg Carrot, chopped
 0.100     lt   Button mushrooms, chopped
 0.025     kg Garlic cloves, crushed
 0.002     kg Italian dry mixed herbs to taste (1/2 tblspn /8ml)
 0.070     kg Tomato paste
 1.500     lt Brown stock, approx (salt reduced)
 0.090     lt Lemon juice to taste
 2*10     pcs Short pastry bottoms and puff pastry tops
 10     pcs Mozzarella slices
 0.005     kg Parsley, chopped

 


1. Assemble all prepared ingredients and equipment..

2. Lightly brown pork, add bacon, onions, celery, carrot, garlic, herbs and fry for a few minutes.

3. Add tomato paste, stock, lemon juice and bring to the simmer and skim. Simmer for about 60 minutes or until pork is tender.

4. Lightly thicken with a slurry and cook out. Correct consistency, seasonings, pH etc.

5. Pack and blast chill.

6. To serve, fill short pastry with filling, top with mozzarella and parsley.

7.Top with puff pastry, glaze with egg, herbs and bake until very hot and golden brown. Serve with mashed potatoes and peas.

8. This pork sparerib pie filling can be served with a puff pastry top filled or gratinated with mozzarella cheese.
