500g diced pork (2cm x 2cm cubes), trimmed of all visible fat
1 tbsp ground cumin
1/4 tsp cayenne pepper
1 tsp dried parsley flakes
1 tsp dried oregano flakes
2 tbsp olive oil
8 skewers soaked in water 1-2 hours
Preparation time: 5 mins
Cooking time: 6 mins

- Combine cumin, acyenne, parsley and oregano. Rub spices evenly into pork and thread onto skewers.
- Lightly brush skewers with oil before and during cooking. Cook on lightly oiled BBQ or grill on medium-high heat for 5-6 minutes (turn 2-3 times) or until juices run just pink to clear when pierced with a skewer.
- Allow pork to rest for a few minutes before serving.
- Serve on almond, apricot and coriander couscous, 1/3 cup per serve.
