Honey Soy Marinade
0.060 lt Sesame oil
0.020 kg Garlic cloves, crushed
0.020 kg Ginger, grated
0.175 lt Soy sauce to taste (salt reduced)
0.090 lt Hoisin sauce, to taste
0.045 lt Tomato sauce
0.500 lt Brown stock, approx.
0.090 kg Honey to taste
0.060 lt Rice wine
0.050 kg Sesame seeds
0.001 kg Chilli powder to taste (1/2 tspn)
0.001 kg Five spice to taste (1/2 tspn)

Assemble all prepared ingredients and equipment
Prepare marinade, heat sesame oil, saute garlic and ginger until soft, add soy, Hoisin and tomato sauces, brown stock, honey, rice wine, sesame seeds, chilli and five spice.
Simmer for 3 to 4 minutes and correct as required.
Chill marinade before use.
Baste pork with half the glaze mixture and marinate for a few hours. Preheat combi oven to 160 C and roast (or combi-steam) for about
1 - 1 1/2 hours or until tender.
Baste with lots of sauce during cooking and if required, increase oven temperature in the last half hour to brown ribs.
