WAPPA - Recipes - Pork Laksa



Readers, this is an especially tasty recipe - an authentic Asian taste complemented by the succulence of Australian pork.



To serve reheat until piping hot, serve in deep soup dish with bean sprouts, egg or rice noodles, fresh coriander, fried bean curd, crispy fried onions and garlic!

Pork Laksa

Ingredients
Method

 1.300 kg Boneless pork shoulder, medium strips
 0.350 kg Sliced onions
 0.025 kg Crushed garlic
 0.025 kg Grated ginger
 0.001 kg Ground star anise
 0.150 kg Laksa curry paste, to taste
 1.900 lt Vegetable or chicken stock, approx.
 0.070 lt Fish sauce, to taste
 0.006 kg Kaffir lime leaves
 0.006 kg Sliced lemon grass
 0.400 lt Coconut milk

 


Assemble all prepared ingredients and equipment

Heat deep pan, add vegetable oil and lightly brown
pork. Add onions, garlic, ginger, star anise and Laksa spice paste and lightly brown.
Add stock, fish sauce, Kaffir lime leaves and lemon grass, bring to boil, simmer and skim.

Simmer for approximately 45 minutes or until pork is tender. Lightly thicken with a slurry and cook out. Add coconut milk, correct consistency, seasonings, PH etc.
