WAPPA - Recipes - Moroccan Spiced Pork

For the cold of Winter try this Recipe!

Serve with couscous.

Moroccan Spiced Pork
  I know you'll love it !
Serves 4
Preperation Time 10 minutes
Cooking Time 12 minutes
Ingredients
Method


500g        Lean Pork Stir Fry Strips
2
1/2 tsp   Ground Coriander
1
1/2 tsp   Ground Cumin
1 tsp        Ground Sweet Paprika
1 tsp        Chilli Paste
2
1/2 tbs   Vegetable Oil
2 Cloves   Garlic cut into slices
1
1/2 tsp   Grated fresh Ginger
250g        Pumpking cut into thin pieces/slices
100g        Baby English Spinach leaves
2 tbsp      Freshly chopped Coriander
1 tbs        Fresh Lemon Juice


Combine ground coriander, cumin, paprika and chilli paste and rub into pork

Use 2 tbs oil to cook pork. Heat half the oil in a large wok over medium-high head add half the pork and stir fry for 1-2 minutes stirring continuously. Transfer to a plate and cover loosely with foil and set aside. Repeat with remaining pork.

Reduce heat to medium add remaining oil and cook garlic for 2 minutes add ginger and pumpkin and cook for 3 minutes stirring continuously.

Return pork to wok add spinach, coriander and lemon juice stir to combine and cook for 2 minutes to heat pork through. Serve immediately with couscous.
