For best results use a moderate heat, and never overcook pork.

Ingredients (Serves 4)
Method


4 lean pork cutlets or loin chops (fat trimmed)
2 tbs drained green peppercorns
1 lemon
1 tbs finely shopped coriander leaves
2 tsp finely chopped mint
1 ½ tbs extra virgin olive oil
Sea salt>

Preparation time: 8 mins + 20 mins standing
Cooking time: 8 mins


1. Place peppercorns into a flat dish and slightly crush. Finely grate the lemon rind and add 1 tsp of rind to the dish and 2 tbs lemon juice. Add the coriander, mint and olive oil andseason with salt.

2. Place cutlets into the dish and coat both sides well with combined mixture. Cover, place in fridge and allow to stand for 20 minutes.

3. Cook pork cutlets on a BBQ or grill over medium to high heat for 4-6 minutes each side (depending on thickness). Allow pork to rest for a few minutes before serving.

4. Serve with BBQ onion skewers and mixed bean salad.
