Enjoy the traditional flavours of pork and apple served in a new manner.

Ingredients (Serves 4)
Method


500g diced pork pieces (3cm x 3cm cubes)
1 lemon
3 tbs Dijon mustard
2tbs honey
1tbs olive oil
freshley cracked pepper
1 Green apple
12 slices Prosciutto / Parma ham
8 bamboo skewers, soaked

Preparation time: 18 mins + 30 mins marinating
Cooking time: 6 - 8 mins


1. Finely grate lemon rind and place into a flat container with mustard, honey, olive oil and pepper. Stir well to combine. Juice lemon. Cut the apple into eight segments, seed and cut each segment into 3 large pieces, place into a non-metallic bowl and pour in the lemon juice. Cut each slice of prosciutto in half then wrap a piece of prosciutto arou.d a piece of apple. Set aside. Pour remaining lemon juice into marinade.

2. Thread pork and wrapped apple onto skewers, allowing 3 pieces of each per skewer. Place skewers into marinade and coat well, cover and allow to marinate for 30 minutes.

3. Cook pork kebabs on a lightly oiled BBQ or grill over a medium to high heat for 6 - 8 minutes (turn 2 - 3 times) or until the juices run pink to clear when pierced with a skewer.

4. Serve with BBQ potato slices and green salad.
