500-600g of Pork Strips
3 tblspn peanut oil
8 spring onions, sliced
2 1/2 tsp grated ginger
1 clove garlic, crushed
2-3 red chillies (seeded) finely chopped
1 1/2 tbsp lemon grass, finely chopped
1 tbsp grated lime rind
3 tbsp lime juice
2 tbsp hoisin sauce
1 1/2 tbsp salt reduced soy sauce
1/3 cup chicken stock
200g sliced baby beans

Heat 1 tbsp oil in hot wok, add half the pork, quickly toss to brown and seal meat(1-2 mins), remove.
Heat remaining oil, reduce heat, add spring onions, ginger, garlic, chillies, and lemon grass, stir cook 1 minute.
Add rind, juice, hoisin sauce, soy sauce, stock and beans, cook 1-2 minutes. Return pork to wok, stir and combine.
Serve with boiled noodles or rice. Serves 4.
