1.2kg pork scotch
2 tablespoons oil
1/3 cup mandarin marmalade
1 tablespoon Chinese five spice powder

- Preheat oven to moderate 180°C
- Trim excess fat from meat
- Roll meat and tie up securely at regular intervals to retain its shape
- Heat oil in a deep baking dish on top of stove; add meat and brown all over on high heat
- Heat marmalade in a small pan over low heat
- Add five spice powder and stir to combine
- Brush meat all over with half the marmalade mixture and bake for 30 mins
- Brush with remaining marmalade and cook a further 45 minutes
- Leave in a warm place for 10 minutes, covered with foil, before slicing
- To serve, remove string and slice to desired thickness
