Spicy Pork with Bean Chilli Nachos

Ingredients for 8-10 Serves
Method
 1.300     kg Boneless pork shoulder, mince (85% CL)
 0.350     kg Chopped onions
 0.025     kg Crashed garlic
 0.150     kg Tomato paste
 0.018     kg Tex-Mex chilli bean spice mix, to taste
 1.700     lt   Brown veal or chicken stock, approx.
 0.800     kg Cooked red beans

 


1. Assemble all prepared ingredients and equipment.

2. Heat deep pan, add vegetable oil and lightly brown pork mince.

3. Add onions, garlic, tomato paste, chilli spices, and saute for a further few minutes.

4. Add stock, bring to simmer and skim.

5. Add red beans and simmer for approximately 35 minutes until pork is tender.

6. Lightly thicken with a slurry if desired and cook out.

7.Correct consistency, seasonings, pH etc. Pack and blast chill.

8. To serve, reheat until very hot, serve with baked corn chips, sour cream and chopped parsley. Sprinkle with grated cheese if desired.
