Spicy Coated Pork with Capsicum Salsa
Exquisite!     
 
Ingredients for 4-6 Serves
Method


8 Pork Loin Chops
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
2 teaspoons sweet paprika
2 tablespoons olive oil

Combine spices and oil in large bowl, coat pork with mixture, Cover, regrigerate 30 minutes. Cook pork, in batches on headed oiled griddle pan (or grill or barbeque) until borwned on both sides and cooked through. Serve with Capsicum Salsa.

Capsicum Salsa
1 medium (200g) red capsicum, finely chopped
1 medium (200g), green capsicum, finely chopped
2 small (260g) tomatoes, seeded, finely chopped
2 green onions, finely chopped
1 tablespoon fresh coriander, finely chopped
1 tablespoon olive oil
2 tablespoons lemon juice
1 clove garlic, crushed

Capsicum Salsa
Quater capsicums, remove seeds and membranes. Roast under a hot grill or in a very hot oven skin side up, until skin blisters and blackens. Cover capsicum pieces in plastic or paper for 5 minutes, peel away skin, chop capsicum finely. Combine capsicum and remaining ingredients in a medium bowl; mix well.

Preperation Time: 10-15 minutes
Cooking Time: 10 minutes
